Easy Zucchini Quiche

It’s finally Friday and that means 2 things:
1. The weekend is ahead!
2. We’re having a nice family dinner together so food will need to be prepared đŸ™‚
I always like to use the ingredients I have available in my fridge rather than buying ingredients especially for a specific dish, so I opened the fridge and here’s what I came up with:
A GREAT Zucchini pie! The best part about this pie besides the great taste of it is that you can actually use any other vegetable in it instead of zucchini or in addition to it.

Ingredients:
For the zucchini mix:
1/2 chopped onion
5-6 Zucchinis
1 chopped garlic clove
1 tsp garlic powder
For the pie mixture:
1 1/2 cups all purpose flour
1 tsp baking soda
3 eggs
1/2 cup milk
4 full tbsp yogurt/ sour cream
Salt & Pepper

How to prepare:
Preheat oven to 180C (350F)
On an oiled fry-pan and over medium heat mix the onions and zucchini until the zucchini extracts its liquids and is starting to turn golden-brown
Add the garlic and the garlic powder and stir for another minute ir so. Take off heat and pit aside to cool.
In a mixer bowl, place all pie mixture ingredients and mix well on low-medium speed for about 1 minute. Once everything is mixed well, add the zucchini mix.
Pour the mix into a greased Pyrex or baking pan (about 11″X7″ size) and place in pre-heated oven.
You can decorate it with cherry tomatoes, sesame, oregano on top before placing in the oven.
Bake for about 30 minutes until the pie is brown.
