Broccoli Muffins – Quick lunch for school

I’ve challenged myself this year. I decided that I am not sending my kids to school with sandwiches as lunch, so every day i come up with something healthy they would like, and so far it works!There are many things that can replace the good old fashioned sandwich but these muffins are one of the easy to make options. They can be made from any vegetable you have at home, you can add your favorite seasonings and they are ready in no time.
The kids loved it!

Here’s what you’ll need: (8 muffins)
8 Broccoli Flowers (you can use frozen ones)
2 tbsp Flour
1/2 tsp Baking Soda
3 Chopped Slices of Cheddar cheese (or any other hard cheese you like)
1 tbsp Plain Yogurt
1 Egg
4 tbsp Milk

Directions:
**Preheat Oven to 175C (350F)**
1. Place the Broccoli flowers in the cupcake pan.
2. Mix the rest of the ingredients all together.
3. Pour the mixture on top of the Broccolis and place in preheated oven for about 20 minutes or until golden brown.
You’re done! That was fast and easy!
