Colorful Cuscus with vegetable medley soup

Yay! It’s the first day of spring! I love spring! Everything is coming back to life, the flowers, the animals; even the people on the streets seem more alive 🙂

Speaking of color, how about something colorful AND healthy for lunch/ dinner?

Here’s a recipe for yummy, easy, healthy, colorful, vegetarian cuscus I made yesterday.

I always add something new to the vegetable medley, this time it was cauliflower.

Also, thanks to “Bulk Barn” I even had colorful cuscus for this dish.

And the greatest thing of all is that it was ready in no time.

For the Cuscus:

Depending on the kind of cuscus you have, follow the instructions. For most of them we use 1:1 proportions. Meaning, 1 cup of cuscus for 1 cup of boiled water (or ½ on ½ or however you like it – depends on how much you need).

 

For the cuscus soup to go on top of the cuscus:

Ingredients:

½ Onion – chopped

1 Sweet potato

1 Zucchini

3 Potatoes

10-15 Cauliflower flowers

1 Carrot

2 tbsp vegetable oil

5 cups boiled hot water

¼ tsp Cumin

¼ tsp Turmeric

1 tsp Garlic powder

Salt + Pepper

(Sometimes I add just a pinch of cinnamon – it gives it an Indian flavor)

Here we go:

Step 1:  Before you start, make it easy on yourself. Make sure that all vegetables (carrot, potatoes, sweet potatoes, zucchini) are cut into cubes in your desirable size (don’t cut too small or it’ll turn mushy real fast and we don’t want that).

Step 2: On medium- high, heat 2 tbsp oil and add the chopped onions to it until golden.

Step 3:  Add the carrot to the onion and stir (it’ll add some lovely orange color to the dish) for about a minute.

Step 4: Add the rest of the vegetables to the pot and stir for a minute. Add the spices (cumin, turmeric, garlic powder and salt/pepper) and stir once again until they are all over the vegetables.

Step 5: Add the 5 cups hot water, stir and let boil. Once it reaches boiling, lower the heat to medium and place lid on.

Cook for about 20-25 minutes. Check the veggies once in a while. You want to make sure they are ready but not over cooked and too soft.

After about 20-25 minutes it is ready! And now all that’s left to do it place some of this yummy cuscus veggies on top of some cuscus (and don’t forget to pour some of the soup liquids on it too).

Amazingly enough, even though it’s really healthy – the kids LOVE it! J They love the variety of veggies they see in their plate.

So there you go – a fast and easy solution for dinner / lunch.
