Stuffed Collard Leaves

I wanted to make something new for our Friday family dinner. So I went to the market and decided I’ll buy Kale leaves to stuff. Well…they had no Kale leaves in the size I needed so I looked around and picked a different kind of leaves based on size only 🙂When I came to the register to pay the lady there asked me what it was, I replied “Collard” and then she asked what do I do with it and how, so I replied “I have no idea, but I’m sure I’ll find out” 🙂 “Brave” she mumbled 🙂

So I went home and read about these leaves. Apparently they are from the Broccoli family and really good for you. And what made me even more happy that it’s super easy to use them as leaves for stuffing.

All you need to do is separate the leaves, place them in a big pot and pour boiling water on them. Cover the pot and let the water boil for about 3-4 minutes. Turn the heat off, wash the leaves in cold water (to stop the softening) and that’s it. They are ready to be stuffed.

So I used the stuffing I use for peppers (here’s the recipe: Stuffed Peppers – Maya’s Kitchen).

You simply spread a leaf, place 1 tbs of stuffing on the lower 1/3 of the leaf, cover the stuffing with the leaf’s sides and roll. That simple.

Dinner was great, kids and hubby were happy and I was thrilled I was able to make something from an ingredient I never knew before 🙂 Ha!
