Vegetarian Hot Dog Patties

So here I am, in my kitchen, its Friday afternoon and I’m trying to think what I can make that is vegetarian, filling and tastes nice. I look in the fridge and everything I have in there looks like a lot of work but then I open the fridge drawer and see that we have Vegetarian sausages for the BBQ tomorrow. Hmmmm, I wonder if I can use it as real food :). I had one leek in the fridge as well so I decided to try and make something of these two. Here’s the result. Believe it or not, it was served with red sauce over mashed potatoes and was gone in no time. Mission accomplished.

Ingredients (Yields 12 balls):

1 Vegetarian Sausage/ Hot Dog

1 tbsp Vegetable oil (for the leek) + 3 tbsp oil for frying the patties

1 Leek, only white part – chopped

1 tbsp Tomato Paste

3 tbsp Bread Crumbs

1 Egg

1 tsp Dry basil

Salt and Pepper to taste

 

Directions :

1. In a chopper, chop the Sausage.

2. Fry chopped leek on 1 tbsp oil over medium heat, until softens.

3. Mix chopped sausage, fried chopped leek, tomato paste, bread crumbs, egg and spices until well combined.

4. Create golf size balls and fry on preheated and oiled pan. Fry until bottom is brown and then flip to other side. Remove from pan when both sides “tanned”.

 

You can either serve these plain or make some red tomato sauce and serve in it. Either way, they were SUPER fast to make and I basically used what I had in the fridge. Gotta love it  🙂
