Grilled Shrimps with Garlic and Basil

Sunshine is good! Sunshine is happy! Sunshine is Vitamin D! Sunshine is BBQ!!!

How easy is it to just taking whatever you want to eat, put it on the BBQ rack and let it grill?

We had chicken yesterday and I had a craving for shrimps for a while now. So I took out the bag of shrimps I had in the freezer, whipped a marinade and had the hubby toss it on the BBQ. The results were yummy, light, flavorful and gone in no time 🙂Generally speaking I’m always a fan of a non-meat dinner rather than one with meat/chicken, especially when it’s soooo easy.

Ingredients: (Yields about 16 skewers with 5 shrimps on each)

Thawed or fresh shrimps

3 garlic cloves – diced

¼ cup olive oil

2 tsp dry basil

1 tbsp sweet chili sauce

1 tsp balsamic vinegar

Salt and pepper

Directions:

1. Mix the marinade ingredients together and add the shrimps. Stir shrimps in until well coated and let stand for 20-30 minutes.

2. Put marinated shrimps on skewers and place on preheated grill/ BBQ rack on medium heat.

3. Grill for about 3 minutes on each side. Shrimps are ready when they are pink-orange.

I served it over baby potatoes in turmeric and butter with a side garden salad. Was DELISH!
