Grilled Lemon Zucchini – I love my BBQ

I want to start with an ode to my BBQ. Oh BBQ how I love thee, you make summer cooking so easy for me 🙂

And once again, I utilized the BBQ for dinner – I love how easy it is. I always try to make sure that the kids eat their veggies; either raw or cooked or in this instance – barbequed.

Just take a zucchini, make the marinade, then cover the zucchini slices and grill- As easy as that. You’ll get a wonderful vegetable with an even more wonderful flavor. You definitely want to bookmark this one.

 

Grilled Lemon Zucchinis

 

Grilled Lemon Zucchini - I love my BBQ

Grilling in the summertime! Why go with meat and chicken when you can grill veggies? here's a super easy recipe for fresh lemony zucchinis
Ingredients
  • 3 Medium Sized Zucchinis (you can use large ones too)
  • 2 tbsp Olive Oil
  • ½ lemon – squeezed (you need the juice)
  • ½ tsp Garlic Powder
  • Salt to taste
  • Optional – 1 tsp Chopped Dill
Instructions
  1. Slice the Zucchinis length wise. Every slice needs to be about ½ cm thick (or ⅓ inch)
  2. Prepare the marinade: Mix all other ingredients well together until combined.
  3. Pour the marinade over the sliced zucchinis and make sure they are all covered in it.
  4. Place marinated zucchinis over a preheated BBQ wire rack; Heat over medium heat, covered, for about 4 minutes on each side.
  5. Zucchinis are ready when they are semi-soft.

Deviled Eggs with Cottage Cheese and Herbs

Ever since I can remember myself I loved deviled eggs. I remember my mom used to make them when we expected guests or celebrated something. I know now that it’s funny I always waited for this special treat, because after all it’s just a hard boiled egg. So yesterday I celebrated, well…Wednesday, by making deviled eggs.

The truth is that I was tired of omelets or scrambled eggs and I wanted something that I like eating and the kids would love as well, because whether you like it or not, deviled eggs have some kind of gimmick in them.

The traditional deviled eggs are made with mayo, but I decided I’d make a healthier version and to be honest I always thought it’s pretty weird to use an egg product in hard boiled eggs 🙂

Anyway, I used cottage cheese instead of the mayo and that was a big hit! I also added some dill to make it “lighter”. The kids obviously loved it and even my husband, who refrains from eating deviled eggs, ate them and said their good. So that’s the secret apparently – no mayo.

Deviled Eggs with Cottage Cheese and Herbs

Serves: 8 Halves
 
Ingredients
  • 4 Hard Boiled Eggs
  • 4 tsp Cottage Cheese
  • ½ tsp Chopped Dill
  • Salt to taste
  • Sprinkle with Za’atar
Instructions
  1. Cut eggs in half and empty the hard boiled egg yolks into a small bowl.
  2. Add the Cottage Cheese to the egg yolks. Add the dill and salt and mix until combined.
  3. Using a teaspoon, stuff each egg white with the cottage filling.
  4. Sprinkle with Za’atar.
