Stir – Fry Vegetables – Add some red to your wrap

Last weekend was nice and hot, so we spent most of it laying on our deck, in the sun, while the kids were playing in their pool and running towards the sprinklers. After a while, obviously we all got hungry. Now, who really had the energy to get up and make something for dinner? I had to do it anyway. I needed something easy, fast and light, it was too hot for something else. So I sliced some red peppers, tomatoes, onion, stir fried them with olive oil and put it in a wrap. Oh my goodness was that GOOD.

So here you go, a nice healthy, light, easy and fast solution for dinner, lunch or even brunch. Fits perfectly to these nice n’ hot summer days and the kids loved putting their wrap together 🙂

Ingredients for the Veggies:

2 Red bell peppers – sliced

20 Cherry tomatoes – Cut in half (or you can use one big tomato – cubed)

1/2 Onion – Sliced

1 Garlic clove – sliced

4 tbsp olive oil

1 tsp Balsamic vinegar

Directions:

1. Heat the olive oil in a frying pan over medium heat.

2. Add the onion, peppers, tomatoes and garlic (in this order).

3. Stir- fry until peppers soften (about 10-15 minutes). Keep stirring to avoid sticking.

4. After peppers are softened a bit, turn the heat off and immediately add the balsamic vinegar. Stir it in.

That’s it! I didn’t even add salt!

Now all that’s left to do is make an omelet, fill your tortilla wrap with the veggies and omelet and you’re good to go.

A side salad would even upgrade it 🙂
