Potato salad – so fast you won’t notice you just made it

Every Passover when we went to my mother in law’s house, you could find this salad which I think is a meal on its own and last week it hit me that I don’t need to wait for Passover to make this 🙂 The thing I like most in this salad is that it gets even better after a day in the fridge. The onions in it soften and become sweet and add a great flavor. Potatoes, hard boiled eggs and onion, the ingredients you’ll always have handy, and that’s exactly what you’ll need for this salad.

 

Ingredients:
6 Cooked and peeled whole
3 hard boiled eggs
½-1 finely sliced onion (slice into half circles)
2 tbsp Mayo
Salt and pepper to taste

Directions:

Cut the potatoes and eggs into medium cubes, add sliced onion and finally mix in the mayo until fully coats the salad ingredients. Salt and pepper to taste and that’s it!!

You can eat it right away but it is better to place it in the fridge for a couple of hours before eating to let the flavors come out.

    • Thanks Lupe! I agree! in fact, I think that there is far more variety in vegetarian dishes than in meat and chicken dishes.
