Veggie Burgers

We always have a veggie burger in the freezer. It’s good to go on the BBQ and I also sometimes use it as base for some recipes. This time I decided I’ll make my own veggie burgers/ patties. I remembered that walnuts have a strong earthy flavor and thought I’d add them to the mix so it tastes less veggie and more burger 🙂 it worked. Everyone were happy and I was pretty proud of myself. The only thing I think I should mention is that these burgers are not meant to go on the grill, so keep them on a pan.

Ingredients:

2 Zucchini – Grated

1/2 Onion – chopped

4 Mushrooms – chopped

3 tbsp vegetable oil

1 cup grind walnuts

1 egg

2 tbsp red wine

1 tsp cumin

1 tbsp garlic powder

1 tsp paprika

7 1/2 tbsp bread crumbs

1/4 cup vegetable oil – for frying patties

Directions:

1. Over medium- high heat, preheat 3 tbsp oil and add the chopped onion, zucchini and mushrooms. Stir-fry until soften. Place in a bowl.

2. Into the bowl with fried veggies, add the rest of the ingredients and mix well until combined.

3. Using wet hands, shape circles from mixture (tennis ball size) and flatten into a Pattie (about 1cm thick).

4. Place patties on a preheated frying pan (Medium heat) with the 1/4 cup oil in it. Fry until brown and then flip to brown other side.
