Chicken with Rice – A Whole Meal in One Pot

Wouldn’t it be great if we could just fill a pot with ingredients, let it cook and have a whole meal? I mean no side dish, no main course, the whole meal in one pot. I personally think it’s awesome! So that’s what I did. Chicken, rice, spices, wait and ta-da dinner is served.

How convenient, a whole meal in one pot. The chicken, the rice, now all that's left is to get the plate. Simple yet yummy.
Ingredients
  • 5 Chicken Thighs – Cubed
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tbsp Vegetable Oil
  • ½ Onion – Chopped
  • 2½ Cups Boiling Water
  • 1 Cup Rice
  • Salt & Pepper to taste
Instructions
  1. In a pot, preheat the oil over medium heat and sauté the chopped onion until softens.
  2. Add the cubed chicken thighs, garlic powder and paprika and constantly stir until chicken is almost fully cooked (you’ll see it changes the color – takes about 3 minutes).
  3. Add the boiling water, salt and pepper and lower heat to minimum.
  4. Add the rice, stir once or twice, cover the pot and let cook on low heat for about 30 minutes.
Notes
Cooking time may vary if you are using brown rice; In which case, please act based on the cooking instructions on the rice package.
