Breaded Mushrooms Appetizer with Home Made Dip

On the same day I made the breaded turkey meatballs I decided to make something just before I start cooking. Something to munch on that will help lower the crazy levels of hunger I was in. I noticed that when I’m hungry or mad the food doesn’t come out right so making this little munch was a good idea, for the sake of everyone 🙂

We love mushrooms! All of us, even the kids; they can eat raw mushrooms for snack at school, so I decided to take advantage of that and make breaded mushrooms with a home made dip. I wasn’t sure how it would turn out so I didn’t make too many, looking back I should have doubled the amount.

Breaded and Fried Mushrooms with Home Made Dip

Serves: 14 Pieces
 
Great appetizer! you can feel the crunchiness of the crumbs and the succulent mushroom at the same time! what a treat.
Ingredients
  • 7 White Mushrooms – Halved
  • 1 Egg
  • 1 tbsp Soy Sauce
  • 4 tbsp Bread Crumbs
  • ½ tsp Garlic Powder
  • 1 tsp Za’atar (Optional)
  • 1 tsp Sesame Seeds
For the Dip:
  • 3 tbsp Mayo
  • 1 tbsp Ketchup
  • ¼ tbsp Soy Sauce
Instructions
  1. In a medium bowl beat the egg with the soy sauce.
  2. In a separate bowl, mix the bread crumbs, garlic powder, Zaatar and sesame seeds.
  3. Preheat vegetable oil in a frying pan (about ½ cm deep) over medium heat.
  4. Dip the mushroom halves in the egg mix fist and them in the bread crumb mix until fully coated
  5. Place in the preheated oil and let fry for about 2 minutes on each side or until brown.
Prepare the Dip:
  1. Mix the mayo, ketchup and soy sauce well and serve.

Breaded Turkey Meatballs

I like my food simple, I really do. Not because I’m lazy or because I want it ready fast, but because I think that this is the best kind of food the simple food. It goes well with everything, every time and anywhere. And this is exactly what these breaded meatballs are. My mom used to make these from chicken but of course all they had at the supermarket after thanksgiving is turkey so I said, why not? These meatballs are great right out of the pan but even greater the next day, when you can just slice them in half and put on a fresh piece of buttered bread. YUM!

Breaded Turkey Meatballs

Serves: 13 Meatballs
 
Great for the kids and in fact for the whole family. Easy to prepare and wonderful to store in the fridge for the next day.
Ingredients
  • ¼ Onion - Chopped
  • ½ Carrot - Finely Chopped
  • 1 Garlic Clove - Finely Chopped
  • 3 tbsp Olive Oil
  • 250-260gr Ground Turkey
  • ½ tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 3 tbsp Bread Crumbs
  • ½ tsp Ground Cumin
  • 1 Egg
  • ½ cup Vegetable Oil (For Frying)
Instructions
  1. In a frying pan, preheat the olive oil over medium heat and add in the chopped onion and chopped carrot. Sauté and stir for about 3 minutes. Add the chopped garlic and stir for another 30 seconds. Remove from heat.
  2. Place the fried onion mix in a bowl and add all the other meatballs ingredients, except for the frying vegetable oil. Mix all together until well combined.
  3. For the coating, place ½ cup bread crumbs and 1 tablespoon sesame seeds in a bowl and mix together.
  4. Scoop with a teaspoon and form ping pong size balls from the turkey mix. Flatten the balls just a bit and dip in the bread crumb mix until fully coated on both sides. set aside in a plate.
  5. Over medium heat , preheat the ½ cup vegetable oil in a frying pan (depending on the size of your pan, the oil should be about ¼ inch or ½ cm deep.
  6. Fry breaded meatballs about 3-4 minutes on each side, until brown.

Banana Chocolate Chip Cookies

When I used to work on the Halifax Waterfront I sometimes went to grab lunch at the wonderful “Cabin Coffee” Café . This little place has the most amazing atmosphere, a cozy and homey one. Imagine a cold winter day and you’re sitting at the café having your hot soup and yummy sandwich in front of the fireplace, so nice. In addition to being a great place it also had the best banana chocolate chip muffins I’ve ever had. So this past Sunday I suddenly had an urge for cookies, I really wanted something with chocolate but had a banana on the countertop that was crying for help. And then it hit me! I can make my favorite banana chocolate chip muffin into a cookie! How perfect would that be?

In addition, this sudden urge of mine couldn’t have come in a better timing than this. I am a member at the Food Bloggers of Canada  and as such, I follow their updates and content. Imagine how surprised I was when I read about the “My Cookies Are The Best” contest, oh YAY! Perfect timing indeed. So I decided to both satisfy my crave for cookies and enter the contest. The winner gets a trip from Manitoba Canola Growers  to participate in the “FBC 2013 Conference” ; How exciting is that?? Wish me luck! Oh…and tell me what you think about my yummy, soft and banana flavored cookies.

 

Banana Chocolate Chip Cookies

Serves: 30 Cookies
 
Banana and Chocolate Chips, what an amazing combo. These cookies are soft, sweet and banana flavored. A guaranteed success.
Ingredients
  • 1 Cup Light Brown Sugar
  • 1¼ Cup All Purpose Flour
  • ½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ⅓ Cup Canola Oil
  • 1 Egg
  • 1 Mashed Banana
  • ½ Cup Chocolate Chips
Instructions
  1. Preheat oven to 350F (175C)
  2. Layer a large baking pan with parchment paper
  3. In a mixer bowl, mix all the ingredients together, except for the chocolate chips, until you get a smooth batter.
  4. Add the chocolate chips into the batter and fold into the batter.
  5. Using a teaspoon, Drop by teaspoonful onto the baking sheet. Make sure the cookies are at least 2 inches apart from each other as they grow in size while baking.
  6. Place in preheated oven for about 10 minutes until golden and a bit brown on the edges.
  7. Let cool completely before removing from the baking sheet (cookies are soft as you take them out of the oven)

Gluten Free Mushroom and Feta Cheese Quiche – Bulky Country Style

If you love mushrooms you will surely love this quiche. There’s actually no special story behind it other than the fact that I wanted something with a strong mushroom flavor. Every time I make something with mushrooms in it seems that they add to the flavor but not fully felt, flavor wise that is. I mean, I can feel that there are mushrooms in something but I would like to feel more of them, the flavor and the texture. So I came up with this quiche. The nice thing about it, other than the fact that this mushroom quiche is gluten free, is the fact that the mushrooms are cut into big pieces, they are bulky, and that results in the full flavor and texture of mushrooms in this quiche. But enough talking, just try it, you’ll love it.

Gluten Free Mushroom and Feta Cheese Quiche - Bulky Country Style

This country style mushroom quiche has a great smell of mushrooms and a great taste of mushrooms. The taste and texture are so dominant you'll love it, and all thanks to the bulky pieces.
Ingredients
  • 18 Mushrooms – Quartered
  • 1 Onion – Sliced
  • ¼ Cup Vegetable Oil
  • 4 Eggs
  • 1 tsp Garlic Powder
  • 4 tbsp Sour Cream
  • Salt and Pepper
  • 1 Cup Feta Cheese – Crumbled
Instructions
  1. Prepare a pie dish (or a Pyrex) and spread a little bit of oil on it. You can use oil spray.
  2. Preheat oven to 350F (175C)
  3. Pour the oil into a skillet and preheat over medium heat
  4. Sauté the onion slices on the heated oil for about 3-4 minutes while stirring
  5. Add the quartered mushrooms and stir for about 4-5 minutes until the mushrooms soften a bit
  6. Once ready, place the mushroom mix in the pre oiled baking pan (Pyrex)
  7. Spread the crumbled feta evenly on top of the mushrooms
  8. In a separate bowl, mix together the other ingredients until fully combined
  9. Pour the batter over the feta cheese and mushrooms (do not mix together) and place in preheated oven for 45-50 minutes until brown and set

Sweet and Sour Chicken Drumstick – Kids’ Favorite

Whenever we go out for some Chinese food, the kids always have the same thing – Sweet and Sour Chicken; and to be honest I like it too, but I never thought I can make sweet and sour chicken at home, well apparently I can. The only thing is that I didn’t have chicken breast or any other part of chicken I can cut into cubes. The only thing I had was chicken drumsticks, so I improvised and made sweet and sour drumsticks. The kids liked the idea and the chicken; it was gone before I even noticed. I can’t believe I didn’t make this all these years; this is definitely staying with us.

 

Sweet and Sour Chicken Drumstick - Kids' Favorite

Serves: 6 Drumsticks
 
Sweet and Sour Chicken is everyone's favorite I believe. How about sweet and sour drumsticks?
Ingredients
For the Pre-frying:
  • 6 Chicken Drumsticks
  • ¼ cup oil
  • 3 tbsp corn starch
  • 1 egg
For the Sauce:
  • ½ cup sugar
  • ¼ cup vinegar
  • ¼ cup ketchup
  • 1 tsp garlic powder
  • 1½ tbsp soy sauce
Instructions
  1. Preheat oven to 400F (200C)
  2. Preheat the ¼ cup oil in a skillet over medium heat
  3. In one bowl, beat the egg and in a separate bowl have the corn starch ready
  4. Dip each drumstick in the corn starch and then in the beaten egg and place on preheated skillet with oil
  5. Fry the chicken until it is starting to look golden brown but not fully fried. Fry about 4 minutes and set aside.
  6. In a medium bowl mix all the sauce ingredient together until fully combined
  7. Arrange the partially fried chicken drumsticks in a small baking pan (preferably deep or a Pyrex) and pour the sauce batter over it. Make sure everything is coated with the sauce.
  8. Cover with foil and place in preheated oven for 45 minutes
  9. After 45 minutes, remove foil and return into oven for additional 10-15 minutes uncovered
Notes
* This can also be prepared with cubed chicken breast

Blueberry Grape Cake

The great cooking website Food52.com was having a contest. The theme of the contest was grapes; anything you can make with grapes. Knowing how much my family loves my Tanned Apple Cake, I decided to use its base and create a new filling – a grape filling. I added some blueberries to the mix as well and the result was a very tasty cake. So now I’m waiting for the contest results as well 🙂

 

 

Grape Cake

Fruity, great color, wonderful taste and easy. This is a variation of my apple cake that I came up with for a contest at Food52.
Ingredients
For the dough:
  • 1 Cup All Purpose Flour
  • 1 tsp Baking Powder
  • ⅓ Cup White Sugar
  • 100 Grams Butter
  • 2 Egg Yolks
For the filling:
  • 2 Cups Red Seedless Grapes - Halved
  • 2 Cups Frozen Blueberries
  • 2 tbsp White Sugar
  • 50 Grams Butter
  • ½ tsp Cinnamon
  • ½ tsp Corn Starch
For the Topping:
  • 2 Egg Whites
  • 2 tbsp White Sugar
Instructions
Prepare the dough base:
  1. Preheat oven to 175 C(350 F)
  2. Line the bottom and edges of an 8.5 Inch round baking pan with parchment paper
  3. In a mixer bowl, mix all the dough ingredients together until combined into one soft dough ball
  4. Flatten the dough on the bottom of the lined baking pan and just a bit on the edges.
  5. Place dough in the preheated oven for about 15 minutes until golden and puffed. Remove from oven and set aside.
Prepare the filling:
  1. In a medium saucepan place the butter, 2 tbsp sugar, grapes, cinnamon and blueberries and heat over medium heat. Stir often for about 10 minutes until grapes soften a bit.
  2. Add the corn starch and stir well until the grape mix is just a bit thicker (similar to jam)
  3. Gently place the grape mix on the baked dough and spread evenly. Make sure you do not spread on the edges, leave the edges with no filling. Set aside to cool a bit.
Prepare the topping:
  1. Using a mixer, beat the remaining 2 egg whites with 2 tablespoons of white sugar. Beat the eggs until you get a firm foam. To check if it's firm enough tilt the bowl, if the foam is steady it is ready. If it's a bit runny, beat some more.
  2. Spread the egg foam over the filling. Spread evenly over the edges as well and place back into the preheated oven for another 15 minutes until foam is golden on the top

Emily Deschanel Greek Style Lemon Roasted Potatoes

Every time we go to a Greek restaurant I enjoy their vegetables; especially the potatoes. They are lighter and so full of flavor; apparently they make it with lemon and that gives the potatoes such an amazing taste. So I decided I need to try and make the lemon roasted potatoes myself. I came up with a recipe and the potatoes turned out so good! But you know what the best part is? The next day, if you have leftovers, you can either heat it up and then it tastes even better or, better yet, heat it up, sprinkle with crumbled feta cheese and put back in the oven for another 3 minutes. I promise you – you will ask for more. You can also make the same recipe and leave the skin on the potatoes; in fact, you may be interested to know that there is a celebrity that likes this exact dish. If you ever watched the series “Bones” (IMDB info about “Bones”) , the beautiful lead actress – Emily Descanel (Here’s some info about Emily) apparently loves this dish, it is her favorite 🙂 anyway, “Bones” is definitely a show you need to watch, it is awesome! And these potatoes are definitely a dish you have to try, they are even more awesome 🙂

Greek Style Lemon Roasted Potatoes

Great and refreshingly tasty greek style potatoes. The flavor of great potatoes with the lightness of the the lemon. Perfect.
Ingredients
  • 7 Potatoes – Peeled or Unpeeled
  • Lemon Juice – From ½ lemon
  • Lemon Zest from ½ Lemon (finely grated peel)
  • ½ Cup Olive Oil
  • 1 Cup Water
  • 1 tsp Garlic Powder
  • 2 Garlic Cloves – Minced
  • 1 tsp Oregano
  • 1 tbsp Cilantro - Chopped
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 425F (220C)
  2. Cut potatoes into medium- large cubes
  3. In a bowl, mix all the other ingredients until fully combined
  4. Pour the lemon dressing on the potatoes and mix well together until potatoes are coated
  5. Put in a deep baking pan lined with parchment paper and cover with foil
  6. Place in preheated oven for 50 minutes
  7. After 50 minutes, remove foil cover and let cook for additional 10 minutes

Corn and Cheese Salad – One of our favorites

Sunday. Brunch. No ideas – again. I want to make it look yummy yet pretty and sophisticated, I also want it to be easy, fast and the kids to like it. I know, I know, maybe too much to ask? I don’t think so. Take a look at our all time favorite, I always have the ingredients handy and we almost never have leftovers. Corn and cheese! Can you seriously tell me that you do not like one of the ingredients?

 

Corn and Cheese Salad - One of our favorites

Ingredients
  • 1 Can Corn (Niblets)
  • 1 Cup Grated Cheese (any kind you like)
  • 1 tbsp Parsley – Chopped (Can be substituted with dill or green onions- Scallions)
  • 1½ tbsp Mayo
Instructions
  1. Place all ingredients in a salad bowl and mix until fully coated.
