Orange Chocolate Chip Spelt Cookies

I think I might have had a writer’s block for the past month or so, because I couldn’t bring myself to writing something on the blog. That, in addition to having family visiting and spending time with my parents and my mother-in-law were the reasons for not seeing anything new around here.

But hey, when you have family coming over once in a couple of years it goes without saying that everything else in your life kind of gets pushed over.

That said, it doesn’t mean I didn’t spend time in the kitchen. True; I spent less time thanks to my mom and my mother-in-law (THANK YOU) but I still had my moments of therapy in my kitchen aka cooking.

So this time I had 2 lonely oranges just laying there in the fruit basket, I had to do something.

What I did was come up with a recipe for spelt flour (of course) soft orange cookies.

The texture came out soft and fluffy, and it almost felt like baked upgraded pancakes, so I can safely say that these cookies can also be served to toddlers since they are so soft and melt in your mouth and you don’t even necessarily need a stand mixer to make these.

In any case, I’m pretty sure eaters of all ages will love these with a nice cup of hot cocoa, coffee or tea.

So much better than bear paws!

Orange Chocolate Chip Spelt Cookies


Orange Chocolate Chip Spelt Cookies

Soft and scrumptious orange cookies. You can literally say their baked pancakes but with spelt flour.
Ingredients
  • 1 ¾ cup Spelt Flour (I use wholegrain organic – can be replaced with 1½ cup all purpose flour)
  • ¼ cup Vegetable Oil
  • ¼ cup Fresh Orange Juice
  • ½ Cup Plain Yogurt (Not Bio)
  • ¼ cup Brown Sugar
  • 4 tbsp Honey
  • 1 tsp Baking Soda Powder
  • 1 Egg
  • 1 tsp Orange Zest
  • Chocolate Chips
Instructions
  1. Preheat oven to 320F (160C)
  2. Prepare parchment paper layered baking sheet
  3. Mix all the ingredients in a bowl, except for the chocolate chips, until fully combined and you get a nice even batter.
  4. Using a teaspoon, scoop some batter and place on the baking sheet (2 inches apart from each other at least)
  5. Decorate with chocolate chips on the top of each cookie and place in the preheated oven for 8-12 minutes or until golden brown.
  6. You’ll know it’s ready when you push a little bit with your thumb and the thumbprint bounces right back.
  7. Allow the cookies to cool completely before serving.
