Greek Style Lemon Roasted Potatoes
- 7 Potatoes – Peeled or Unpeeled
- Lemon Juice – From ½ lemon
- Lemon Zest from ½ Lemon (finely grated peel)
- ½ Cup Olive Oil
- 1 Cup Water
- 1 tsp Garlic Powder
- 2 Garlic Cloves – Minced
- 1 tsp Oregano
- 1 tbsp Cilantro - Chopped
- Salt and Pepper to taste
- Preheat oven to 425F (220C)
- Cut potatoes into medium- large cubes
- In a bowl, mix all the other ingredients until fully combined
- Pour the lemon dressing on the potatoes and mix well together until potatoes are coated
- Put in a deep baking pan lined with parchment paper and cover with foil
- Place in preheated oven for 50 minutes
- After 50 minutes, remove foil cover and let cook for additional 10 minutes
