Apple Pockets

What a great treat this is! Eat it cold, eat it straight out of the over, no matter how you choose to eat this, you are in a a real treat filled with fall flavors.
Ingredients
Dough Ingredients:
  • 2½ cups all purpose flour
  • 1 tbsp dried yeast
  • ¾ vegetable oil (do NOT use olive oil)
  • 2 tbsp sugar
  • ½ cup lukewarm water
For the filling:
  • 3 peeled apples
  • 1 tbsp sugar
  • ¼ tsp cinnamon
  • 2 tbsp butter (unsalted)
Coating ingredients:
  • 1 beaten egg
  • 2 tbsp sesame
Instructions
  1. Preheat oven to 175C (350F)
  2. Mix the dough ingredients together well, knead them until they are all mixed well together and form soft dough.
  3. Leave the dough to rest in the bowl for about 30-45 minutes. NOTE: the dough will not rise - so don't worry.
  4. In the meantime prepare the filling.
  5. Cut the peeled apples into small cubes.
  6. Melt the butter in a pot over medium heat and put the apples in the pot once the butter has melted
  7. Add the sugar and cinnamon and stir everything well together.
  8. Stir every 2 minutes or so to avoid burning the apples. Cook and stir the filling mixture until you see that the apples turned soft and brownish and until you notice that there almost no liquids left (The apples will extract liquids while cooking them)
  9. When the filling is ready take it away from the heat and place aside to cool (you can put it on a big cold plate, this will help it cool faster)
  10. Divide the dough into 2 balls and flatten each one into a "leaf". You will probably not even need to flatten it on a floured surface.
  11. Cut into round shapes using a cup or a glass or round cookie cutters.
  12. Place feeling on 50% of the circles you've cut. Make sure you do not place too much of the filling and that it's being placed in the middle.
  13. Cover each circle with filling in it, with another circle and tighten the edges so the filling will not leak out during baking.
  14. Brush each "pocket" with beaten egg and sprinkle with sesame
  15. Place on a parchment paper layered baking sheet about 1 inch away from each other and place in the preheated oven for about 30 minutes.
