Mediterranean Quinoa Salad

A refreshing salad with feta cheese, sun dried tomatoes, kalamata olives and quinoa. It's like spring in your spoon.
Ingredients
  • 1 cup Cooked Quinoa
  • ½ cup Chopped Bell Pepper
  • 3 Sun Dried Tomatoes - Chopped
  • ¼ cup Kalamata Olives - Chopped (You can also use black olives)
  • ½ cup Crumbled Feta Cheese
  • 1 tsp Chopped Fresh Oregano
  • ½ tsp Chopped Fresh Basil (about 1 large leaf)
  • 1 tsp Lemon Juice
  • 2 tbsp Olive Oil
Instructions
  1. Mix all the ingredients together and serve.
