Real Hot Cocoa

It’s almost the end of January which officially leaves us with one more month of bitter cold winter. I don’t care what everyone else says; as far as I’m concerned winter is almost over! Now, what’s better than a cup of hot cocoa on a cold winter day? I usually just go for the easy fix and make the kids some hot chocolate with the chocolate premix and some warm milk, but when I’m really in the mood I make this hot cocoa and believe me, it is incomparable to the hot chocolate mix. You can actually taste the chocolate in this one. So go, make yourself a cup of hot cocoa, make yourself cozy in front of the TV or a good book, and enjoy winter! When I want to feel really cozy I even add a shot of Bailey’s or Kahlua.

Hot cocoa with marshmallow

Real Hot Cocoa

A real Hot Cocoa, the one you can actually taste the chocolate in.
Ingredients
  • 1 Cup Milk
  • 1 tsp Cocoa Powder (Unsweetened)
  • 2 tbsp White Sugar
  • ¼ tsp Vanilla Extract
  • Marshmallow
Instructions
  1. Pour the milk into a medium saucepan and heat over medium heat until the milk begins to boil (you’ll see tiny bubbles, don’t wait for it to fully boil).
  2. Add the sugar and sprinkle to cocoa powder while mixing to avoid lumps. Stir in the saucepan until no lumps. Add the vanilla extract and stir.
  3. Keep saucepan on stove-top and let boil gently. Once it forms some foam, remove from heat.
  4. Pour into a mg and add some marshmallows.

Chocolate Cake Ice Cream Cones

Well, summer is most definitely over by now. It’s colder in the evenings and even during the day. I had some ice cream cones left from the summer but of course no ice cream. While I agree that ice cream is a great thing regardless of the season I wasn’t planning on buying a bucket of ice cream just to be able to use the cones, so I made a different kind of “Ice Cream”. I made a cake batter and poured it into the ice cream cones. I then baked it and added chocolate on top and voila! I got the ice cream look with the taste of chocolate and a lot less mess. The kids loved it and I was even happier to see their clean placements on the table after they were done.

This recipe can be used for just a regular chocolate cake in a small bake pan or for more ice cream cones. I’m not sure about the size because I made 8 cones and used the rest of the batter for a mini cake in a 7 inch pan.

Chocolate Cake Cones

Great for the kids and ever greater for birthdays. I only made 8 cones and a mini cake but you can play around with the number of cones and double the amounts as required.
Ingredients
  • ½ Cup Sweetened/ Unsweetened Cocoa Powder (You can also mix the two)
  • 1 Cup All Purpose Flour
  • ¼ tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 Cup White Sugar
  • 1 Egg
  • ½ Cup Vegetable Oil
  • 1 Cup Hot Water
  • 8 Ice Cream Cones (small ones with flat bottom)
For the chocolate coating:
  • ½ Cup Heavy/ Whipping Cream
  • ¾ Cup Semi Sweet Chocolate Chips
Instructions
  1. Preheat oven to 350F (175C)
  2. Mix all the cake ingredients together
  3. Pour about ¼ cup (until cone is ¾ full) of cake batter in each cone. Pour the rest of the batter into additional cones or into a 7 inch (18cm) greased baking pan.
  4. Place the cones standing (preferable in a deep baking pan to avoid falling) and gently place in preheated oven. Place the 7 inch cake in the oven as well (or you can bake it later when cones are ready).
  5. Bake for about 35-40 minutes.
  6. Wait until the cakes (cones) are cool and prepare the coating.
To prepare the coating:
  1. Simmer heavy cream in saucepan
  2. Add the chocolate chips in while simmering and stir really well until fully molten.
  3. Remove from heat and pour about 1-2 teaspoons on each cooled ice cream cone. Decorate with coconut or sprinkles.
Notes
**Make sure you immediately place the cones in the oven after filling them to avoid the cones getting wet and soft from the filling.

Coconut Cake with Chocolate Chips

I love coconut, who doesn’t  And this is exactly why I was so happy to find this old recipe I had in my old recipe bag. I have a plastic bag at home, a really old one and it’s full of recipes, the old fashioned ones – the hand written ones 🙂 It’s actually quite a chunk of history when you think about it because they are not only hand written but some of them are also written on pieces of old newspapers and flyers which makes it even more fun to dig in them. So I dug in my bag yesterday and found this great coconut cake recipe I used to love. I decided to upgrade it and added some chocolate chips which turned out to be a great upgrade! Try it. The cake is not too moist and the chocolate chips sink to the bottom of the cake while baking but the end result is a cake you’d like to have with your coffee. And besides, look at the small number of ingredients it has – perfect.

 

Coconut Cake with Chocolate Chips

Soft and tasty cake with chocolate chips on the bottom.
Ingredients
  • 1½ Cups White Sugar
  • 1½ Cups Self Rising Flour (or all purpose flour + 1 tsp baking powder)
  • ½ Cup Finely Shredded Coconut – Unsweetened
  • 1 Full Cup (250ml) Heavy Cream (Whipping Cream)
  • 1 tsp Vanilla Extract
  • 3 Eggs
  • ½ Cup Chocolate Chips (Use your favorite)
Instructions
  1. Preheat oven to 350F (180C)
  2. Layer a 8.5- 9.5 Inch spring form baking pan with parchment paper, or you can spread butter to avoid the cake from sticking.
  3. Place all ingredients in a mixer bowl and mix until fully combined. The batter reminds the consistency of a pancake batter.
  4. Pour the cake batter onto the layered baking pan and place in oven for 40-45 minutes until brown.
Notes
* Use 8.5- 9.5 Inch Round spring form cake pan

Banana Chocolate Chip Cookies

When I used to work on the Halifax Waterfront I sometimes went to grab lunch at the wonderful “Cabin Coffee” Café . This little place has the most amazing atmosphere, a cozy and homey one. Imagine a cold winter day and you’re sitting at the café having your hot soup and yummy sandwich in front of the fireplace, so nice. In addition to being a great place it also had the best banana chocolate chip muffins I’ve ever had. So this past Sunday I suddenly had an urge for cookies, I really wanted something with chocolate but had a banana on the countertop that was crying for help. And then it hit me! I can make my favorite banana chocolate chip muffin into a cookie! How perfect would that be?

In addition, this sudden urge of mine couldn’t have come in a better timing than this. I am a member at the Food Bloggers of Canada  and as such, I follow their updates and content. Imagine how surprised I was when I read about the “My Cookies Are The Best” contest, oh YAY! Perfect timing indeed. So I decided to both satisfy my crave for cookies and enter the contest. The winner gets a trip from Manitoba Canola Growers  to participate in the “FBC 2013 Conference” ; How exciting is that?? Wish me luck! Oh…and tell me what you think about my yummy, soft and banana flavored cookies.

 

Banana Chocolate Chip Cookies

Serves: 30 Cookies
 
Banana and Chocolate Chips, what an amazing combo. These cookies are soft, sweet and banana flavored. A guaranteed success.
Ingredients
  • 1 Cup Light Brown Sugar
  • 1¼ Cup All Purpose Flour
  • ½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ⅓ Cup Canola Oil
  • 1 Egg
  • 1 Mashed Banana
  • ½ Cup Chocolate Chips
Instructions
  1. Preheat oven to 350F (175C)
  2. Layer a large baking pan with parchment paper
  3. In a mixer bowl, mix all the ingredients together, except for the chocolate chips, until you get a smooth batter.
  4. Add the chocolate chips into the batter and fold into the batter.
  5. Using a teaspoon, Drop by teaspoonful onto the baking sheet. Make sure the cookies are at least 2 inches apart from each other as they grow in size while baking.
  6. Place in preheated oven for about 10 minutes until golden and a bit brown on the edges.
  7. Let cool completely before removing from the baking sheet (cookies are soft as you take them out of the oven)

Black and White Butter Cookies

We had such a relaxing weekend. We actually didn’t do anything! We just ate, watched TV, had a movie night and basically just chilled. Of course, our lack of motivation to do something else was a direct result of the wintery weather outside. It was way too cold and way too wet to think about an outdoor activity or about any activity as a matter of fact; so what do you think I did? Yup! Baked; Come on…when the winds are blowing it’s time for cookies and milk isn’t it? And so, I did just that. Took me maybe 5 minutes to prepare the batter, gave it another 30 minutes in the fridge and about 20 minutes after I had freshly baked cookies. The best kind of cookies – Simple!

 

Black and White Butter Cookies

Serves: 60 Cookies
 
Great butter cookies with minimum work and maximum results.
Ingredients
  • 200 grams butter – melted
  • 2½ Cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • ¾ Cup White Sugar
  • 2 Eggs
  • 1 tsp Unsweetened Cocoa Powder
Instructions
  1. Place all ingredients in a mixer bowl and mix well until combined.
  2. Divide dough in 2. Place one half aside and to the other half add 1 tsp unsweetened cocoa powder and mix well until combined.
  3. Place both dough halves in the fridge for about 20 minutes.
  4. To shape the cookies, take ½ tsp from the light dough and ½ from the dark dough and create a small ball.
  5. Place on baking sheet lined with baking paper and flatten with your fingers.
  6. Place in pre-heated oven for 15 minutes until edges are starting to become brown.
  7. Remove from oven, let cool and keep in sealed container for freshness.

Almond Chocolate Cupcakes – With or without a Halloween theme

I have a few websites I like to follow, cooking websites obviously, and everywhere I look all I see is pumpkin. Pumpkin cakes and cookies, pumpkin donuts and breads, pumpkin pies and pastries, and I know it is the season and that orange goes so well will the fall and the upcoming Halloween but to be honest, I’m not sure I like pumpkin 🙂 and I’m not even going to discuss the fact that most of the recipes are from canned pumpkins, not a can fan here. So I was trying to think what I can make that’s tasty, will go well with my morning coffee and of course, will make the kids happy. I went online, copied and printed a bat image. I made a stencil and decided to decorate my almond chocolate cupcakes with it. The kids were thrilled because they were t honed who made the cupcakes and because they got to eat the cupcakes the next morning. Needless to mention that my mission was accomplished and I didn’t even need to use pumpkin.

 

Almond Chocolate Cupcakes - With or without a Halloween theme

A great cupcake recipe and an even greater decoration idea 🙂 You'll taste the chocolate and feel the almond flavor. Just wonderful.
Ingredients
  • 1⅓ Cups All purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 4 tbsp Vegetable Oil
  • ¾ Cup Unsweetened Cocoa Powder
  • 1½ Cups White Sugar
  • 2 Eggs
  • 1 tsp Almond Extract
  • 1 Cup Milk
Instructions
  1. Preheat oven to 350F (175C)
  2. Prepare muffin pan lined with muffin cups
  3. Combine dry ingredients and add the wet ingredients. Mix well using a mixer until well combined and you get a smooth batter.
  4. Fill each muffin cup ¾ full and place in preheated oven for 15-20 minutes until a toothpick inserted into the cupcakes comes out clean.
Notes
To create the decoration simply sift confection sugar over your stencil.

Double Chocolate Muffins with White Chocolate Chips

Who doesn’t like chocolate muffins? We all do! But what would you say about a double chocolate muffin? A muffin with chocolaty flavor and some white chocolate chips in it. This was so easy to make. I made it with the kids and they loved it. Of course, the muffins didn’t survive long. I added icing on top and sprinkles all over and the muffins looked even more festive.

 

 

Double Chocolate Muffins with White Chocolate Chips

The muffins are sweet, very soft and can be kept in a sealed container for about 5 days which is an added bonus.
Ingredients
  • 2 cups all-purpose flour
  • 1½ cups sugar
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ Cup Whipping Cream
  • 1 cup milk
  • 1 egg
  • 2 tbsp vegetable oil
  • ½ tsp vanilla extract
  • 1 cup white chocolate chips
Instructions
  1. Preheat oven to 350F (175C).
  2. Grease muffin cups or line with paper muffin liners.
  3. In medium bowl, mix together flour, sugar, cocoa powder, baking powder, and baking soda. Add the milk, egg, whipping cream, oil and vanilla extract and mix well together until fully combined into an even smooth batter.
  4. Add the chocolate chips and stir well.
  5. Fill the muffin cups ¾ full
  6. Place in preheated oven and bake for 20 minutes, or until toothpick inserted in center comes out clean.
