Nothing says spring more than lemons right? their color, their smell, their freshness, it just feels like after a long winter nap, your senses come to life.

My husband’s parents have their own lemon tree, and every year like a clock, it gives so many lemons, and they’re all so big a juicy. The only catch is that our family lives thousands of miles away and even though the lemons are super great, they usually don’t make it all the way here, except for this year.

Two weeks ago we received 2 parcels in the mail. The scent that came from them when my husband picked them up at the post office meant only one thing – lemons!

Yep, we got some lemons, lots of them actually, so naturally we made lots of lemonade and we use them in salads but we are now at the point where we need to really make sure we use them before we lose them.

The first thing I thought was lemon meringue pie, but that’s so obvious and boring (and also requires some work which I had no intention of doing) so I went for the least work and maximum flavor – Lemon Muffins. I used my Coconut Oil in it instead of utilizing butter and the results are amazing! My son was helping me out and almost couldn’t resist eating the batter. There’s something about the mix of coconut and lemon that is hard to resist, fresh and tropical and just so irresistible.

I glad I made these muffins, because now I’ll also have something to give the kids to school as snack. The only thing I’m thinking of changing is the use of plain all purpose flour because I’m not a big fan, but one batch of muffins won’t kill me would it?
Now all that’s left to do is sit back, sip on a cup of mint tea, grab a Coconut Lemon Muffin and let the sunshine in. Simple.

Moist Lemon Muffins With Coconut Oil

Serves: 12 muffins
 
These are little sunshine in a muffin cup. Sour and sweet refreshing muffins. Mix and bake.
Ingredients
  • ½ Cup + 2 Tbsp Coconut Oil (Solid)
  • ½ Cup + 2 Tbsp Sugar
  • 1 ½ Tbsp Lemon Zest
  • 2 Eggs
  • ½ Cup Sour Cream
  • ½ Cup Lemon Juice
  • 1 ½ Cup All Purpose Flour
  • 1 tsp Baking Powder
Instructions
  1. Preheat oven to 375F (180C) and line a 12-cup muffin baking sheet with paper muffin cups (or you can brush the baking sheet with some oil)
  2. In a mixer bowl beat the coconut oil, sugar and lemon zest until you get a fluffy mix
  3. Add in the eggs, sour cream and lemon juice and mix until you get an even cake batter
  4. Add in the flour and baking powder and mix well until the batter is even and has no lumps in it
  5. Using a large spoon, divide the batter between the 12 muffin cups and bake in the preheated oven for 25 minutes or until golden brown on top and a cake tester inserted, comes out dry
Notes
**Optional - you can sprinkle with icing sugar on top for added sweetness to these sour goodies**

I would like to start this post with a rant and go ahead and say it: I don’t like preparing the kids’ lunchboxes! not on a daily basis. Does this make me an awful mom? I hope not.

I guess I’m the only one to blame. I have such high expectations and standards I set to myself, that with time, I find it hard to answer my own expectations.

Last year, I decided to minimize the gluten in my kids’ food. I decided that they will no longer be taking just sandwiches to school because it’s just not nutritious enough. And when they are taking sandwiches, I make sure it’s homemade bread with low to no gluten.

And now, here I am complaining about it, Typical.

I can’t wait until they are old enough to make their own lunches. Does this ever happen? because to be honest, I don’t remember myself making my own school lunches. And even if I do get them to make their own food, I guarantee that I will be standing there, watching like a hawk to make sure they are eating healthy. So like I said at the beginning, it’s my fault, my insanity, and I’m the only one to blame.

But really, rants aside, I find myself full of satisfaction most of the times I prepare their lunches because I was able to either use up leftovers or come up with something new and delicious.

This time, it was the second option – something new and delicious. and this time it’s gluten free corn muffins, with bell peppers and goat cheese. Perfect for the lunchbox and the over protective mom – that would probably be me.

Gluten Free Bell Peppers and Goat Cheese Corn Muffins

Gluten Free Corn Muffins with bell peppers and goat cheese are the perfect solution to put in the lunchbox. Easy mix and bake and 20 minutes after you have your muffins ready for the box.
Ingredients
  • ½ Cup Cornmeal
  • ¼ tsp Salt
  • ½ Cup Gluten Free All Purpose Flour
  • ½ tsp Xanthan Gum
  • ¼ tsp Baking Soda
  • ½ Cup Milk + 1 Tbsp White Vinegar
  • 1 Egg
  • ¼ Cup Vegetable Oil
  • ½ Cup Crumbled Goat Cheese
  • ½ Cup Finely diced Bell Pepper
  • 1 tsp Dry Basil
Instructions
  1. Preheat oven to 375F (190C) and oil spray 10 muffin cups (I used silicone ones)
  2. Place the cornmeal, salt, flour, Xanthan and baking soda in a mixing bowl and mix together.
  3. Prepare ½ cup milk, add the vinegar into the milk and set aside.
  4. Add the egg and oil into the flour mix and finally add the milk with vinegar and mix well until combined.
  5. Add in the peppers, goat cheese and basil, fold into the mix until evenly combined in the batter.
  6. Divide the entire mix into 10 muffin cups and bake for 10-15 minutes in preheated oven.

Mini Chocolate Brownie Muffins

Weather is starting to get warmer and we definitely see a bit more sun these days. While most normal people would prefer spending a sunny day on their decks just soaking in vitamin D, I would probably prefer to work in the garden or surprise- surprise, bake something.

So the other day I went to Wal-Mart with my girl to buy some cupcake decorating supplies for her birthday. They had a Mini Muffin Pan (Clickable link) on sale and once again, I just couldn’t resist. Bake and cookware on sale immediately turn me into a kid in a candy store. So of course I purchased my new toy and rushed to the kitchen.

I didn’t feel like baking the traditional fluffy muffins, I wanted something sweet and chocolaty. The solution was crystal clear – Brownies!

How fabulous would it be to bake brownies in mini muffin cups? Very cool! Not to mention super convenient and pretty. So that’s exactly what I did. I also added some almond extract because as I mentioned in the past, I just LOVE the smell of almond extract, it kind of adds sweetness without the sugar; it’s just so good.

I ended up making 16 mini brownie muffins which ended up being eaten in about 30 minutes. That’s about one mini brownie muffin every two minutes – pretty impressive don’t you think? Oh yeah – they were DELICIOUS!

Mini Chocolate Brownie Muffins

So easy, so fast and so yummy! These Chocolate mini brownie muffins have amazing almond fragrance and are just impossible to resist.
Ingredients
  • 1 cup white sugar
  • ½ teaspoon Almond extract
  • ½ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ cup cocoa powder
  • ⅛ teaspoon salt
  • 2 eggs
  • ½ cup butter – melted
  • Icing Sugar – for sprinkling
Instructions
  1. Preheat oven to 350F (175C)
  2. Place mini muffin cups inside mini muffin baking pan
  3. Melt butter and set aside
  4. Mix the rest of the ingredients together and then add the melted butter. Mix well until batter is smooth.
  5. Pour into mini muffin cups (about ¾ full) and place in preheated oven for 20-25 minutes
  6. Sprinkle with icing sugar or cover with icing

Apple Spice Muffins

Whether you like it or not it is the apple season. Apples are everywhere and it’s not only beautiful and tasty, it’s healthy too. I know, I know, it’s not as healthy when you put it in a muffin, but let’s just pretend 🙂 and anyways, there is no doubt that the sweet smell of apples and cinnamon and allspice in the house is definitely healthy for the soul. I made these muffins last week (sorry for the delay, have no time to breathe these days) and they were gone after 1 hour, now what does that mean?

Wonderful muffins with fall flavors and just how I like it, with ingredients you most definitely have in your kitchen. the smell in the house will be amazing.
Ingredients
  • ½ Cup Butter
  • ⅔ Cup White Sugar
  • 2 Eggs
  • 1½ Cup All Purpose Flour
  • 1 tsp Cinnamon
  • ¾ tsp Allspice
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 Cup Apple Sauce (I just put fresh apples in a food processor)
  • 1 tsp Vanilla Extract
Instructions
  1. Preheat oven to 350F (175C)
  2. Prepare a cupcake pan layered with 12 muffin cups
  3. Whisk the butter and sugar together until white and soft.
  4. Add the eggs and mix well until even and fluffy.
  5. Add the other ingredients and mix well until fully combined.
  6. Pour into muffin paper cups until they are ¾ full and place in the preheated oven for 20 minutes until golden brown.

Double Chocolate Muffins with White Chocolate Chips

Who doesn’t like chocolate muffins? We all do! But what would you say about a double chocolate muffin? A muffin with chocolaty flavor and some white chocolate chips in it. This was so easy to make. I made it with the kids and they loved it. Of course, the muffins didn’t survive long. I added icing on top and sprinkles all over and the muffins looked even more festive.

 

 

Double Chocolate Muffins with White Chocolate Chips

The muffins are sweet, very soft and can be kept in a sealed container for about 5 days which is an added bonus.
Ingredients
  • 2 cups all-purpose flour
  • 1½ cups sugar
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ Cup Whipping Cream
  • 1 cup milk
  • 1 egg
  • 2 tbsp vegetable oil
  • ½ tsp vanilla extract
  • 1 cup white chocolate chips
Instructions
  1. Preheat oven to 350F (175C).
  2. Grease muffin cups or line with paper muffin liners.
  3. In medium bowl, mix together flour, sugar, cocoa powder, baking powder, and baking soda. Add the milk, egg, whipping cream, oil and vanilla extract and mix well together until fully combined into an even smooth batter.
  4. Add the chocolate chips and stir well.
  5. Fill the muffin cups ¾ full
  6. Place in preheated oven and bake for 20 minutes, or until toothpick inserted in center comes out clean.
