Potato and Onion Hash Brown Quiche With Coconut Oil Crust – The Perfect Brunch

What’s brunch for you? for me, it’s that weekend meal where I get to play around with recipes and ingredients because I finally have some time to do it and then the highlight is sitting around the table with my family and sometimes friends, just enjoying the food and each other, just like that, relaxing, enjoying, celebrating weekends and togetherness.

Now that the sun is out more often and the weather seems to be a bit nicer, I hope we can have out brunches out on the deck. The only problem with brunch the way I see it, is the fact that I feel like doing nothing right after.

I feel so lazy after a good brunch that any other plans made for that same day are pointless to me. why ruin a good moment? just because life gets in the way? that’s no excuse.

A few weeks ago I made this quiche. I just craved potatoes and knew that if I mix potatoes and eggs I’ll get a main dish for brunch, and after I have that, well, all that’s left to make are a couple of salads and I’m done.

So I mixed a few ingredients for the crust, tossed some potatoes in a pan, combined and baked and voila, my main dish was ready.

If you’re a fan of hash browns and eggs for brunch (or breakfast) then this recipe is for you. And if you’re not – you should be. Wish ketchup or sriracha drizzled on top and a side of fresh vegetables, this is a perfect and easy brunch option.

Potato and Onion Hash Brown Quiche With Coconut Oil Crust - The Perfect Brunch

Onion and Hash brown in a baked brunch, and if that's not enough, top it up (or down) with coconut oil crust - bingo!
Ingredients
For the crust:
  • ¾ Cup Whole Wheat Flour
  • ¼ Cup Coconut Oil (Solid)
  • 1 Egg
  • 2 Tbsp Cold Water
For the Hash Brown Filling:
  • 2 Medium Potatoes - Diced into really small cubes
  • ½ Onion - Diced into really small pieces
  • 2 Tbsp Olive Oil
  • 3 Eggs
  • 3 Tbsp Milk
  • ½ tsp Garlic Powder
  • Salt and Pepper to taste
  • Chopped Scallion Greens for Garnish (optional)
Instructions
  1. In a stand mixer bowl, place the flour, coconut oil and egg and start mixing them together on low-medium speed until they begin to combine.
  2. Add in the 2 tablespoons cold water one after the other while mixing and keep mixing until the dough forms and it is smooth and even. do not over mix it or it will be sticky.
  3. Once the dough is ready, remove it from the bowl and wrap it with plastic wrap and place in the fridge for about 20 minutes or until you are done preparing the filling.
  4. Prepare the filling by first tossing the olive oil, potatoes and onion in a pan over high heat.
  5. Toss for about 5-7 minutes or until potatoes soften and you can easily poke them with a fork (the smaller the cubes the faster this will go).
  6. In a medium mixing bowl combine the eggs, milk, garlic powder, salt and pepper and stir until evenly mixed.
  7. When the potatoes are ready, add them into the bowl with the egg mix and fold them in to fully cover them.
  8. Preheat oven to 375F (180C) and a a 9.5” pie dish (I used Pyrex)
  9. Remove the chilled dough and roll it on a lightly floured surface until you get a round leaf that’s about 10.5”-11” in size.
  10. To make it easier to place it inside the dish, simply roll the dough around your rolling pin loosely and unroll it onto your dish, pressing it onto the dish and the edges.
  11. Pour the potato-egg batter onto the crust dough and garnish with chopped scallion greens (optional)
  12. Bake for 25-30 minutes until the egg is set.

Easiest Beef Stew With Potatoes

I’m going to start with a statement here: “I love my mother in law’s food”

I really do, I’m not just saying it to become her favorite, it’s been too long and it’s too late now 🙂 I’m just being honest with you.

After we moved to Canada and had to adjust to life with no family around us 24/7, one of the tough things was to get used to not eating grandma’s food on weekends (either my mom’s or my husband’s mom). the kids missed it a lot and I get it, because food is not just that – food. It’s also some kind of trigger that makes memories feel more alive, it’s something that comforts us and is associated with something that happened or someone we know alot of times. So after we moved to Canada we missed that food that connected us with what we have always known as our home.

One of the things my son missed the most is my mother in law’s beef stew. It’s really simple but that’s exactly why it’s so good.

So when she came for a visit this past summer we made sure that on her second day here, we visited the grocery store and got some stewing beef.

The kids licked their fingers at the end of the meal, and looking at them I decided that I just HAVE to learn how to make this myself.

And even though I did ask and got specific instructions, just like always, I had to go and make something of my own.

This recipe is not originally my mother in law’s but it’s the closest thing to it as far as we’re concerned. I made this today and the kids were thrilled, they know it’s going to be good when I tell them it’s like grandma’s beef stew.

It’s easy to make and uses simple and readily available ingredients and it’s super wonderful on a cold evening like this. Give it a try.

Easy Beef Stew with Potatoes

Easiest Beef Stew With Potatoes

Easiest Beef stew EVER. Uses only a few ingredients and tastes so good.
Ingredients
  • 1 Kg (2 lbs) Cubed Stewing Beef
  • ½ Medium Onion
  • 2 Carrots
  • 3 Tbsp All Purpose Flour
  • ¼ tsp Ground Black Pepper
  • 2 Tbsp Vegetable Oil
  • 3 Cups Vegetable Broth
  • ½ tsp Salt
  • 6-7 Medium Potatoes
  • 3 Tbsp Chopped Fresh Dill
  • 1 ½ Cup Hot Water
Instructions
  1. Cut the stewing beef pieces into 1 X 1 inch cubes (if they came in a bigger size)
  2. Chop the onion into small pieces and slice the carrots into medium rings (or cubes)
  3. Place the 3 Tbsp flour in a medium bowl and add the beef cubes. Mix or shake well until the beef pieces are all fully covered with a thin layer of flour.
  4. In a medium size pot (preferable wide and heavy bottomed but not a must) preheat the oil over medium-high heat and add the pepper in.
  5. Add in the flour covered beef (without the excess flour, place the pieces one at a time) and make sure it’s in one layer (if it’s not, that’s OK, you'll just need to turn it more).
  6. Add in the carrots and onion and stir together.
  7. Let the beef brown on all sides, stirring and turning the pieces occasionally, until it is nicely browned. About 10-12 minutes.
  8. Once the beef is browned on all sides, add in the vegetable broth and salt.
  9. Partially cover the pot with its lid and lower the heat to medium-low. Cook on medium low with partially covered pot for about 30 minutes. If the broth is boiling and pouring out, you can slightly lower the heat but don’t cook on low.
  10. In the meantime, peel and cut the potatoes into medium cubes.
  11. After the beef had been cooking for 30 minutes, open the lid and add in the potatoes.
  12. Add in the 1 ½ cup hot water until it just about covers the whole stew and potatoes. You may need less than 1 ½ cups or a bit more, depending on your pot size.
  13. Add in the chopped dill and stir to combine the dill in the stew.
  14. Place the lid back on the pot and let the stew cook with a closed lid over medium heat for another 30-35 minutes (if it boils and starts spilling, simply remove the lid a bit to partially cover the pot, but don't completely remove it).

Vegetarian Poutine – Fresh Cut Fries in Mushroom Gravy

Try and Google “Canada’s National Food” and the first result you’ll get is Poutine.

What is poutine you ask? Well, in case you didn’t know poutine is basically a dish consisting of fries topped with gravy, so the way I see it it’s wet fries 🙂 not a very photogenic dish if I may say and up until now I didn’t really understand what people find in it – until I decided to be open minded about this dish and try a vegetarian version of it at home. Now homemade poutine is a whole different story!! Why? Well, fresh potato fries, freshly grated cheese and yummy mushroom sauce – sound good to me!

Remember I told you “Summer Fresh” sent me their whole line up of new cooking sauces? well, thanks to their “Mushroom Marsala” sauce, I was able to whip this dish faster than usual.

Of course the end result tasted So good, but other than that I really liked the fact that it’s so easy and super fast to make this and of course the fact that it’s hassle free thanks to the “Mushroom Marsala” Sauce. I’m telling you, this sauce just made it all possible! Really! Of course, you can make your own mushroom sauce; it’s not too hard, but why go through so much effort after a day at the office. I was super happy with the outcome and the kids flipped!! They loved it so much!! This was the first time we had vegetarian poutine at home and I believe it is safe to say that it’s not the last time!

Vegetarian Poutine - Fresh Cut Fries in Mushroom Gravy

Poutine, one of Canada's national foods. If you're looking for something easy, fast and so good, or just comfort food. This is it.
Ingredients
  • 10 Medium Potatoes – Not peeled!!
  • 2 tbsp Vegetable Oil
  • ½ tsp Ground Nutmeg
  • 1 tbsp Garlic Powder
  • ½ tsp Salt
  • ½ tsp Pepper
For the Sauce:
  • 1 Container “Mushroom Marsala” Sauce by “Summer Fresh”
For serving:
  • Grated Cheese
Instructions
  1. Prepare in advance large baking pan layered with parchment paper
  2. Preheat oven to 200C (400F)
  3. Wash potatoes, leave skin on and cut into fries (sticks)
  4. Place in a big bowl and mix with the rest of the ingredients
  5. Bake in oven fro about 30-40 minutes until potatoes are golden brown and fries are ready
  6. Preheat the sauce (the whole container) over medium-low heat, stirring occasionally until warm.
  7. Plate the fries and pour the mushroom sauce on top. Sprinkle with some cheese on top.

Emily Deschanel Greek Style Lemon Roasted Potatoes

Every time we go to a Greek restaurant I enjoy their vegetables; especially the potatoes. They are lighter and so full of flavor; apparently they make it with lemon and that gives the potatoes such an amazing taste. So I decided I need to try and make the lemon roasted potatoes myself. I came up with a recipe and the potatoes turned out so good! But you know what the best part is? The next day, if you have leftovers, you can either heat it up and then it tastes even better or, better yet, heat it up, sprinkle with crumbled feta cheese and put back in the oven for another 3 minutes. I promise you – you will ask for more. You can also make the same recipe and leave the skin on the potatoes; in fact, you may be interested to know that there is a celebrity that likes this exact dish. If you ever watched the series “Bones” (IMDB info about “Bones”) , the beautiful lead actress – Emily Descanel (Here’s some info about Emily) apparently loves this dish, it is her favorite 🙂 anyway, “Bones” is definitely a show you need to watch, it is awesome! And these potatoes are definitely a dish you have to try, they are even more awesome 🙂

Greek Style Lemon Roasted Potatoes

Great and refreshingly tasty greek style potatoes. The flavor of great potatoes with the lightness of the the lemon. Perfect.
Ingredients
  • 7 Potatoes – Peeled or Unpeeled
  • Lemon Juice – From ½ lemon
  • Lemon Zest from ½ Lemon (finely grated peel)
  • ½ Cup Olive Oil
  • 1 Cup Water
  • 1 tsp Garlic Powder
  • 2 Garlic Cloves – Minced
  • 1 tsp Oregano
  • 1 tbsp Cilantro - Chopped
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 425F (220C)
  2. Cut potatoes into medium- large cubes
  3. In a bowl, mix all the other ingredients until fully combined
  4. Pour the lemon dressing on the potatoes and mix well together until potatoes are coated
  5. Put in a deep baking pan lined with parchment paper and cover with foil
  6. Place in preheated oven for 50 minutes
  7. After 50 minutes, remove foil cover and let cook for additional 10 minutes

Chicken Pot Roast – The food of the lazy

Some people think I’m always cooking and always loving it, well here’s a news flash, I’m not always in the mood 🙂 Yup! There you have it, I’m a normal person. Sometimes I wish my family can just dine on omelets all week long :)so when I feel like I have no mood for cooking, that’s when I come up with the easiest and laziest recipes. This one is one of them. Chicken and potatoes in one pot – A Pot Roast Chicken with literally almost no work at all.

 

Chicken Pot Roast - The food of the lazy

Simple! Chicken and potatoes in a pot with the added flavor of spices. Could it be any more simle or tasty?
Ingredients
  • ½ Onion - Chopped
  • 2 tbsp Vegetable Oil
  • 5 Potatoes – Peeled and cubed
  • 10 Chicken Thighs (skinless and boneless)
  • 2 Garlic Cloves – Halved
  • ½ tbsp Paprika
  • ½ tbsp Cumin
  • Slat and Pepper
  • Hot Boiling Water
Instructions
  1. In a cooking pot, heat the oil over medium heat ad add the chopped onion. Sauté until softens.
  2. Add the garlic and the chicken and stir for about 3 minutes.
  3. Add the potatoes and the spices and stir for another 3 minutes.
  4. Cover with hot water until the whole content is covered (up until the top of the potatoes and chicken ONLY – do not use too much water)
  5. Cover the pot and cook over medium- low heat for about 45 minutes.
  6. Pot roast in ready when the potatoes are ready and you can put a fork through them.
