  • 5 Tbsp Mayonnaise
  • 5 Tbsp Plain Yogurt
  • 4 Garlic Cloves – Minced
  • Salt to taste
Instructions

Pizza Blanca With Spelt Flour Crust

If there’s anything my family will never say “NO” to it’s pizza.

The other week I was thinking of making homemade pizza with spelt crust – our favorite, but then, one look at my daughter was enough to understand that this good ol’ traditional pizza is not going to happen.

It’s that season again; when it’s too warm inside and too cold and breezy outside.

The result: A child with super dry lips the size of her face

The problem: The pizza sauce burns her sore lips

The objective: Making pizza so we can all enjoy it

The obstacle: Tomato sauce a.k.a. Pizza Sauce

The solution: Pizza Blanca

Pizza Blanca is basically pizza with no pizza sauce on it. I must admit that it’s different and kind of weird at first, but after the first bite you get it – it’s really good.

Being able to prepare this pizza with no actual pizza sauce has allowed my little girl to eat her slice(s) with no problem at all. Another nice thing about this is that you can prepare whatever dipping sauce you want on the side and enjoy it exactly the way you like it. I made homemade garlic dip and it was phenomenal.

So let me share this recipe with you before the drool covers my entire keyboard.

 

Pizza Blanca With Spelt Flour Crust

 

Pizza Blanca With Spelt Flour Crust

Pizza Blanca with no pizza sauce on it. Sounds weird at first but then you taste it and the weirdness is gone.
Ingredients
  • 500gr Spelt Flour
  • 1 Tbsp Dry Yeast
  • 4 Tbsp Vegetable/ Canola Oil
  • 3 Garlic Cloves – Minced
  • ½ Tbsp Salt
  • 1 Tbsp Sugar
  • 1 Cup Lukewarm Water
  • Grated Mozzarella Cheese
  • Your favorite toppings
Instructions
  1. Mix all the ingredients (except the toppings) in a mixer bowl using the kneading attachment.
  2. Take a bit of oil in your hands and knead the dough into a ball (in the bowl). You will now have the dough covered with oil in the bowl.
  3. Cover the bowl with a cling wrap and let the dough rest and rise for 35 minutes.
  4. Preheat oven to 350F (180C)
  5. Prepare a baking sheet or a pizza tray covered with parchment paper.
  6. Flatten the dough with your hands directly on your parchment covered baking sheet until it is about ½ inch thick.
  7. Add the cheese and toppings onto the flattened dough.
  8. Bake for 20-25 minutes in the preheated oven.
  9. Serve with your favorite dip.

Beef Meatballs In Red Sauce

Every week I make almost the same thing. Come Friday I make mashed potatoes and some variation of Chicken breast. Why? Because this is what the kids like, and me too.

It’s easy, delicious and consistent 🙂

Last week when I went shopping for groceries, there was a sale on Ground Medium Beef, and although I don’t like eating or working with beef that much (and you can tell, because there are almost no recipes here with beef) I decided to take the leap of faith in this ingredient, and try and make something really delish, so good I’ll regret not having it sooner.

I didn’t really think much (REALLY) and all of a sudden I find myself making meatballs.

I added veggies and made this super yummy red sauce, served on a bed of (of course) mashed potatoes and it was, in one word – Perfect.

How did I not try this before?? Could it be that I was working with the wrong kind of meat? This turned out perfect, and less work than I thought it’ll take.

The meatballs were full of flavor, they weren’t too dense nor too meaty. They blended really well with the sauce and to top this all up – the kids went crazy over the meatballs! They said it’s like the macaroni and meatballs without the macaroni. And to this I say “Grazie” (with my Italian accent).

Beef Meatballs In Red Sauce

Serves: 25 meatballs
 
Beef meatballs with a Mediterranean hint. So easy to make and will definitely work well on your taste buds.
Ingredients
For the Meatballs:
  • 500gr (about 1lbs) Ground Medium Beef
  • ½ Carrot – Finely Grated
  • ½ Onion – Grated
  • 2 Tbsp Cilantro – Chopped
  • ½ tsp Table Salt
  • ½ tsp Ground Black Pepper
  • ½ Tbsp Ground Cumin
  • 1 Egg
  • 3 Tbsp Bread Crumbs
For the Red Sauce:
  • 1 Tbsp Vegetable Oil
  • ½ Onion – Chopped
  • 2 Garlic Cloves – Sliced
  • ½ Tbsp Ground Cumin
  • 8 Tbsp Tomato Paste
  • 2½ Cups Hot Water
  • 2 Tbsp Cilantro – Chopped
  • Salt and Pepper to taste
Instructions
To make the Meatballs:
  1. Place all the ingredients in a medium bowl and mix (knead if needed) until well combined.
  2. Using a tablespoon scoop ½ tablespoon at a time and roll into balls.
  3. Set aside in a plate and prepare the sauce.
To prepare the sauce:
  1. In a wide pot preheat the oil over medium heat and add in the chopped onion, garlic, cumin and tomato paste. Stir consistently until combined and then add the water.
  2. Stir well and add the cilantro, salt and pepper.
  3. Bring the sauce to a boil over medium heat. Once boils gently add in the meatballs.
  4. Once the meatballs are all in the sauce, lower the heat a bit to Medium-Low heat and cover the pot with a lid.
  5. Let cook with a closed lid for 30-35 minutes. If the sauce boils again, lower the heat a bit more during cooking.

Thai Curry Chicken “Summer Fresh” Style

I love going to Thai restaurants. They are the kind of restaurants that use great spices in their food, something I miss dearly here in Halifax 🙂

I like it when the food is just a little bit spicy. Not too spicy to make your mouth burn but just spicy enough to make you crave for another bite. This is exactly how I would describe this next recipe. After “Summer Fresh” sent me their whole new line up of cooking sauces to try out and come up with recipes, and after posting 4 out of 5 recipes, this is the final post with “Summer Fresh” sauces. The “Thai Curry” sauce was the last one left in the fridge and I was lucky enough to enjoy it all by myself 🙂 why by myself? Well, my husband is vegetarian and since this sauce has fish sauce in its ingredients it did not meet the criteria of a vegetarian man, as for the kids, it was just too spicy for them but hey, lucky me, it was just in the right level of spicy-ness for me so guess who got delicious food for dinner and enjoyed the leftovers the next day at work? Yup! Me! 🙂

I made Thai Curry Chicken with this last sauce and let me tell you, it tasted as if I went to a Thai restaurant. I enjoyed it so much! And it only took me about 10 minutes to have it ready in my plate which means win-win for me and Douze Points for “Summer Fresh

Thai Curry Chicken "Summer Fresh" Style

Thai Curry Chicken on a bed of white rice, don't you just love it? Summer Fresh made it possible for me to have a restaurant level dish at my dining table. Awesome!
Ingredients
  • 1 tbsp Vegetable Oil
  • 5 Boneless Chicken Thighs – Cut into strips or cubes
  • 2 Garlic Cloves (Sliced)
  • ½ Onion – Chopped
  • Pinch of Celery Seeds (Optional)
  • 4 full tbsp Thai Curry Sauce by “Summer Fresh”
Instructions
  1. In a medium saucepan or Wok, preheat oil over medium heat.
  2. Add in the onion, celery seeds and garlic and stir for about 1 minute
  3. Add in the chicken and stir for about 5-7 minutes until pieces are well done and white
  4. Stir in the Thai Curry Sauce and mix for about 2 minutes, allowing the sauce to heat and then remove from heat and serve over a bed of rice or noodles

Chicken in Cranberry Sauce by “Summer Fresh”

When “Summer Fresh” sent me their complete new line up of cooking sauces I didn’t think it’ll make my life so easy when it comes to quick dinners for the kids.

This time I had thawed chicken thighs in the fridge, and I didn’t really want to work hard or fry them like I would usually do, so I just opened the fridge hoping to find something that will make this weekday dinner task easier and faster. Luckily I found this great “Cranberry Madeira” sauce and the minute the kids saw it as well that’s all they wanted, I mean, what kid wouldn’t love to have dinner with cranberries? 🙂

I added some blackberries I had and it was a hit! Chicken with berries – perfect.

This was so easy to make too, because all I had to do is cut the chicken, add the sauce and place in the oven. I like it when while the food is being prepared I can utilize the time to complete other things I have on the go. “Summer Fresh” made it easy once again and needless to say that this wasn’t only quick but had a great combination of flavors.

This sauce is definitely a keeper.

Chicken in Cranberry Sauce. Another hit with the help of one of the "Summer Fresh" Sauces.
Ingredients
  • 5 Boneless Chicken Thighs – Cubed
  • 5 tbsp “Cranberry Madeira” sauce by “Summer Fresh”
  • ¼ cup Whipping Cream
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 350F (180C)
  2. Mix Cranberry sauce with whipping cream, salt and pepper
  3. Place chicken cubes in Pyrex and cover with sauce mix
  4. Cover with foil and let cook for 50 minutes
Notes
**Optional - You can add some blackberries or blueberries to the sauce mix**

Vegetarian Poutine – Fresh Cut Fries in Mushroom Gravy

Try and Google “Canada’s National Food” and the first result you’ll get is Poutine.

What is poutine you ask? Well, in case you didn’t know poutine is basically a dish consisting of fries topped with gravy, so the way I see it it’s wet fries 🙂 not a very photogenic dish if I may say and up until now I didn’t really understand what people find in it – until I decided to be open minded about this dish and try a vegetarian version of it at home. Now homemade poutine is a whole different story!! Why? Well, fresh potato fries, freshly grated cheese and yummy mushroom sauce – sound good to me!

Remember I told you “Summer Fresh” sent me their whole line up of new cooking sauces? well, thanks to their “Mushroom Marsala” sauce, I was able to whip this dish faster than usual.

Of course the end result tasted So good, but other than that I really liked the fact that it’s so easy and super fast to make this and of course the fact that it’s hassle free thanks to the “Mushroom Marsala” Sauce. I’m telling you, this sauce just made it all possible! Really! Of course, you can make your own mushroom sauce; it’s not too hard, but why go through so much effort after a day at the office. I was super happy with the outcome and the kids flipped!! They loved it so much!! This was the first time we had vegetarian poutine at home and I believe it is safe to say that it’s not the last time!

Vegetarian Poutine - Fresh Cut Fries in Mushroom Gravy

Poutine, one of Canada's national foods. If you're looking for something easy, fast and so good, or just comfort food. This is it.
Ingredients
  • 10 Medium Potatoes – Not peeled!!
  • 2 tbsp Vegetable Oil
  • ½ tsp Ground Nutmeg
  • 1 tbsp Garlic Powder
  • ½ tsp Salt
  • ½ tsp Pepper
For the Sauce:
  • 1 Container “Mushroom Marsala” Sauce by “Summer Fresh”
For serving:
  • Grated Cheese
Instructions
  1. Prepare in advance large baking pan layered with parchment paper
  2. Preheat oven to 200C (400F)
  3. Wash potatoes, leave skin on and cut into fries (sticks)
  4. Place in a big bowl and mix with the rest of the ingredients
  5. Bake in oven fro about 30-40 minutes until potatoes are golden brown and fries are ready
  6. Preheat the sauce (the whole container) over medium-low heat, stirring occasionally until warm.
  7. Plate the fries and pour the mushroom sauce on top. Sprinkle with some cheese on top.

Stir Fry Tofu in Butter Chicken Sauce

The next few posts are going to be about the new “Summer Fresh” line up of 5 delicious sauces. Why, you ask? Because “Food Bloggers of Canada” have partnered with “Summer Fresh” and gave 15 lucky food bloggers the opportunity to taste test the sauces, the whole line up. What do I mean by taste test? Well, every food blogger selected will get the 5 sauces and will have to come up with yummy and original recipes for each of the sauces. The selected recipes will be featured on “Food Bloggers of Canada”, so you see – it’s a win-win.

Now why am I telling you this? I guess you already guessed, I’m one of the lucky food bloggers! 🙂 so last week I received a box with the sauces and my mind started racing, so many options so little time.

To give you an idea of the various options, here is the complete sauce lineup:

  • 3 Peppercorn Sauce
  • Butter Chicken Sauce
  • Cranberry Madeira Sauce
  • Mushroom Marsala Sauce
  • Thai Curry Sauce

For this recipe I used the “Butter Chicken” sauce, it’s tangy and has the Indian flavor we love so much at home so it worked out perfectly. As I mentioned a few times in the past, my husband is vegetarian so I obviously went with a vegetarian dish. This dish is full of flavor and will go well on everything, whether it’s rice, noodles or potato you’re in for a treat. Bottom line, we all liked this one! Can’t wait to try the other sauces!

Stir Fry Tofu with Butter Chicken Sauce

A great dish using the "Butter Chicken" Sauce by "Summer Fresh". Vegetarian, tangy, easy and just tasty!
Ingredients
  • ¾ container “Butter Chicken” Sauce by “Summer Fresh” (about 450gr)
  • 3 Mushrooms – Sliced
  • 14 Cherry Tomatoes – Halved
  • 200gr Tofu (firm) – Cubed
  • 2 tbsp Fresh Coriander – Chopped
  • 3 tbsp Coffee Cream (18%) or Heavy Cream
  • 2 tbsp Olive Oil
Instructions
  1. In a Wok or a deep frying pan, heat the olive oil over medium- high heat
  2. Add in the cubed tofu and let fry about 4 minutes on each side until you see it starts turning light brown
  3. Add in the tomatoes and mushrooms and toss in the wok for about 2-3 minutes
  4. Pour in the “Butter Chicken’ sauce and stir until veggies and tofu are fully coated
  5. Add in coffee cream and coriander and stir occasionally
  6. Let cook while stirring occasionally for about 10 minutes and serve over a bed of rice, potatoes or noodles.

Sweet And Sour Chicken Strips

Every Friday the kids like to eat chicken, preferably breaded and fried, but I admit that it’s too much work for me sometimes, especially after a long day at work. I wish the kitchen was my only work but it’s not so I have to make changes sometimes to ease myself and make food faster yet tasty. This Friday I decided to take the chicken breast I had and make strips in sauce to serve with the potatoes I was roasting. This is a great recipe and kids’ favorite because it’s semi sweet. It’s easy to make and can be served with anything – bonus points for that.

Sweet And Sour Chicken Strips

Great dish for adults and kids. Easy to make and only a few ingredients.
Ingredients
  • 2 Chicken Breasts (Boneless and Skinless) – Cut into strips
  • 2 tbsp Vegetable Oil
  • 1 Onion – Sliced
  • ¾ Can (100gr) Tomato Paste
  • ½ Lemon – Juiced
  • 4 tbsp Soy Sauce
  • 1½ tbsp Brown Sugar
  • 1 tbsp Sweet Chilli Sauce
  • 1 Cup Hot Water
Instructions
  1. Heat oil over medium heat and add the sliced onion. Sauté onion until soft while stirring.
  2. Add the tomato paste and mix, then add the rest of the ingredients and stir well until combined. Let boil.
  3. Add in the chicken strips and stir. Cover pot with lid and let cook over medium heat for 25 minutes while stirring occasionally.
